"Coconut Chutney"

Ingredients (Serves 3):

• A quarter of a coconut
• 1/2  teaspoon tamarind
• Salt
• 2 dry or green chillies
• 1 tablespoon chopped mint leaves (optional)
• 2 cloves garlic

Method:

• Remove the brown outer skin from the cocomut and grill the white flesh OR Remove the skin and fry the white flesh until brown in about 1 tablespoon oil.
• when cool, grate it.
• Mix grated coconut with all other ingredients.
• Grind to a fine paste with some drops of water.
• Serve with rice.
