"Lentil Soup"
Ingredients: (serves 5)
200g of black lentils (washed)
Salt
3 tablespoons of oil
1 large onion (chopped)
3 ripe tomatoes (chopped)
1/4 teaspoon ginger/garlic mixture
Thyme, chopped parsley
Method:
Boil lentils in pressure cooker with salt and about 3/4 litre of water until cooked. Remove from heat.
Heat oil in a pan. Put in onion and fry until transparent.
Add tomatoes, ginger/garlic mixture, thyme and chopped parsley and cook till a thick gravy is obtained.
Poor the gravy over the lentils. Stir to mix, check seasoning.
Allow to simmer for a few minutes more.
Serve hot with rice and rougaille.
