"Lobster in red sauce"
Ingredients:(serves 3)
3 tablespoons oil
1 tablespoon margarine
1 fresh lobster tail, boiled and cut into pieces
Salt, pepper
1 fine chopped onion
1 clove garlic, crushed or finely slivered
4 ripe tomatoes (pureed in blender)
3 tablespoons tomato paste (canned)
1 tablespoon white wine or dry sherry
Chopped parsley
1 tablespoon grated cheddar cheese (optional)
Method:
Heat oil, fry lobster pieces previously seasoned with salt and pepper. Remove and keep aside.
In the same pan, fry onion and garlic for a minute. Add chopped tomatoes, salt and pepper, mix and cook till all moisture evaporates.
Stir tomaot paste, wine or sherry and lobster pieces into gravy. Check seasoning.
Remove from heat and sprinkle with chopped parsley and cheese, if used.
Serve with toasted bread and salad.
Variation:
1. Instead of lobster, use fresh or frozen prawns.
