"Typical Mauritian Salad"
Ingredients:(serves 5)
2 medium-size beetroots
3 big carrots
3 big potatoes
3 large eggs
1 big onion (finely sliced)
1 tablespoon vinegar
5 to 6 tablespoons oilj
Salt
1/4 teaspoon freshly fround pepper
1 tablespoon chopped shallot (optional)
Method:
Boil potatoes, carrots, beetroots and eggs in a good amount of salted water until vegetables are just cooked and eggs, hard-boiled. Drain.
When cool, peel and cut all (including the eggs) into thin slices.
Place in a large salad bowl. Add sliced onion to mixture.
Dissolve in a separage bowl, the oil, vinegar,salt and pepper
Pour this dressing (vinaigrette) on the vegetable mixture and mix well.
Sprinkle over chopped shallot, if desired.
Serve with bread.
