"Rasgullas"
(Sweet milk balls)
Ingredients: (10 - 15 rasgullas)
1 litre milk
1 to 2 tablespoons lemon juice (or vinegar)
1/2 teaspoon flour (optional)
250g sugar and 1 litre water for the syrup
1/4 teaspoon cardamom powder
Method:
Bring milk to the boil. Sprinkle over lemon juice or vinegar and remove from heat as soon as milk curdles.
Tie remaining white mass in a muslin cloth and squeeze out remaining liquid.
Put white mass in a bowl with the flour, knead until a smooth mixture is obtained. Shape into small balls.
Make syrup. Bring sugar and water to boil. Flavour with powdered cardamoms. Boil till mixture thickens down. (This will take about 15 minutes)
Put in milk balls, reduce heat and allow to simmer till rasgullas become soft and absorb some of the syrup.
Serve cold in small bowls with some syrup.
