"Mixed vegetable curry"
Ingredients:(serves 5)
2 tablespoons ghee
1 big onion (sliced)
3 medium potatoes (boiled, cut into cubes, seasoned with salt)
125g green beans
1 big carrot, cut into cubes boiled and drained
125g fresh peas
Salt, pepper
1 1/2 teaspoon ginger/garlic mixture
3 tablespoons yoghurt
2 cardamoms (split)
2 teaspoons cumin powder
1 teaspoon saffron strands
A pinch of yellow colouring
Some coriander and mint leaves
2 green chillis ( split)
1 cinnamom stick about 3 cm long
3 cloves
1 tablespoon grated coconut (crushed) - optional.
Method:
Heat margarine and fry onion until transparent.
Add potato cubes and brown them.
Next add all other vegetables and stir-fry carefully for 2 or 3 minutes.
Then add all other ingredients, some more salt about half a glass of hot water. Mix well, cover and simmer for a few minutes more.
Serve hot with rice.
